This recipe is great as appetizer or main course. It's lightweight, certainly healthy, and by the way an exotic refreshment.
Ingredients:
- 1.5kg - 2kg fresh asparagus
- about 15 mid-sized shrimp
- 1 clove of garlic
- 20gr thyme
- 1 chili
- 2 passion fruits
- 5 tablespoons olive oil
- a little vanilla
- 50gr butter
- 1 tablespoon honey
- Salt & Pepper
How to cook:
1) Cut the garlic, chilli and thyme into small slices and mix them up with the olive oil.
2) Remove the shrimp's intestines and clean them thoroughly.
3) Peel the asparagus, cut of the woody ends and place the spears on aluminum foil. Then season them with Sea Salt, a pinch of sugar and one tablespoon of butter. Cover the spears with an additional sheet of aluminum foil.
4) Pre-heat your oven to 180 degree Celsius and cook the asparagus for ca. 35min.
5) Cut the passion fruit into half, get the seeds out and mix them up with the vanilla, honey and salt and pepper. Stir in the remaining olive oil.
6) After taking the asparagus out of the oven, use one pan and fry the asparagus with a little butter for one minute and another pan to fry the shrimp for about 5 minutes.
Serve everything immediately after cooking as shown in the picture and the praise will be yours :-)
