Bleder Cream Slices

Bleder Cream Slices are a world famous, sweet bakery, named after the Slovenian city Bled. They are served to coffee, tea and will surprise through their light, fresh and very delicious taste !
The picture, I took myself on a weekend trip with my grand mom to Slovenia in a local restaurant, and believe me, it was as yummy as it looks:







The good news are, the preparation is easy and requires very less time.
Here is a list of ingredients you need:
  • puff pastry (finished product is totally fine !)
  • 600ml milk
  • 200g sugar
  • 60g custard powder (vanilla taste, normal powder could work as well though)
  • 4 eggs (you have to separate them)
  • pinch of salt
  • pinch of real vanilla
  • one shot of rum
  • 500g whip cream
  • 50g powdered sugar
 Directions:
1) The first thing to prepare is the puff pastry. Preheat your oven to 180-200 degree Celsius and cut the puff pastry in square pieces ( size of your baking tray). You will need two baking trays, since one sheet of puff pastry will serve as cover and one as cake floor.
The baking time is 10-15 min and while that is happening, you can turn to step two.
2) In order to make the vanilla cream, mix the yolk with 100ml of the milk, vanilla powder, rum and salt until a smooth texture is achieved. Simultaneously, boil the remain 500ml of milk together with 100g sugar and stir in the vanilla-egg mix from step one. Boil for at most 2-3 minutes and reduce the heat to a low level. 
3) Whip the egg-white and remaining 100g of sugar and also stir into the vanilla cream to make the cream more fluffy. Wait until the cream cools down a bit and then proceed to step four.
4) Prepare one sheet of puff pastry and apply one layer of vanilla cream, about 2cm thick.
5) Whip the 500g of whip cream and add the real vanilla. Apply the whipped cream as second layer on top of the vanilla custard (the vanilla custard is supposed to be cool and have a real custard consistency by now).
6) Finally, take the second sheet of puff pastry and place it on top of the whipped vanilla cream.
Cut your cream bakery into small slices and apply the powdered sugar on top before serving.
